I first discovered coffee as a business in Jacobs Douwe Egberts. Nieczapla reminded me that coffee can also be a craft.
After five years in the coffee world, I was still searching for a product I could truly stand behind. I found it only after moving to Gdańsk — almost by accident, through climbing, thanks to Filip.
Filip is the person behind Nieczapla. A craftsman, an artist, and someone who understands coffee with a depth that cannot be faked.
That is why we are bringing Nieczapla to the European market.

Filip is the person behind Nieczapla.
He studied chemistry, worked as a quality manager in a large corporate environment, and spent more than 15 years building his knowledge of coffee.
Eventually, he chose his own path: a small roastery where quality matters more than scale, and where every roast can be tested, questioned, and refined.
Filip is precise, experimental, and uncompromising. Sometimes almost painfully so. But that is exactly why Nieczapla tastes the way it does.
His goal is simple: excellent coffee, no compromises.

Meet Tomáš
For me, coffee has never been just a product.
I spent five years working in the coffee business, and during that time I came across many brands, stories, and marketing promises. But I was still searching for something I could truly stand behind. Not just another bag of coffee. Not another nice claim. A product with real character, origin, and a real person behind it.
After moving to Gdańsk, something unexpected happened.
I met Filip through climbing. We were talking normally — about life, sport, work. And then, almost casually, he mentioned that he had a small coffee roastery.
That roastery was Nieczapla.
A brand I already knew. And more importantly, coffee that was already among my personal favourites.
Suddenly, the name on the bag was no longer anonymous. The person behind it was standing right in front of me.
Filip took me to the roastery and showed me how he approaches coffee. How much knowledge, precision, and intuition goes into every batch. How he thinks about origin, roasting, flavour, freshness, and the whole journey from green bean to finished cup.
I was genuinely amazed.
Filip is not just someone who roasts coffee. He is a craftsman. An artist. Someone who understands coffee deeply and approaches it with a level of respect that cannot be faked.
For me, Nieczapla is a small piece of black gold from Gdańsk.
Coffee for people who are not looking only for caffeine, but for flavour, story, quality, and experience.
That is how the idea was born: to bring this coffee to more people. To introduce it to the Czech market and show that specialty coffee does not have to be an anonymous premium product. It can be something real — something built by real people, real work, and a real philosophy.

Before Nieczapla, I studied chemistry and worked as a quality manager in a large corporate environment.
That experience shaped the way I think about coffee. Precision matters. Process matters. Details matter. But over time, I started to feel that too many systems were built to protect procedures rather than real quality.
So I decided to go my own way.
I created my own roastery and focused on what I truly care about: coffee, craft, and uncompromising quality.
Coffee has been part of my life for more than 15 years. For me, roasting is not routine production. It is chemistry, experimentation, discipline, intuition, and constant learning.
I like to test, adjust, question, and refine. Sometimes my standards are difficult to work with. I know that. But there is one simple reason behind it:
the coffee must be excellent, or it is not good enough.
That is the mindset behind Nieczapla.
I believe too much industrially produced coffee has become anonymous, flat, and focused on efficiency instead of flavour. I wanted to show that coffee can be different — more honest, more precise, more alive.
Every roast carries that philosophy.
Nothing unnecessary. Nothing average. Nothing hidden behind marketing.
Just coffee made with respect for the bean, the process, and the person who will drink it.
